White Chocolate Creme Brulee

At first glance, creme brulee seems simple: It has a few basic ingredients and can be made in a few short steps. Don't be fooled however, there’s a lot happening! In essence creme brulee is a creamy, pudding-like, custard topped with burnt brittle sugar that cracks when you dive into it. Also the great thing about this recipe is the room it leaves for variation. You can swap out the white chocolate for guava, banana, dark chocolate or even Baileys or Kahlua. Whatever the flavor you crave you can substitute it in!
* Also note that in the video below I made 2x the recipe listed below so the quantities in the video differ from the quantities in the recipe listed but the method remains the same.

White Chocolate Creme Brulee
Yield - 6 each
16 oz Heavy Whipping Cream
6 each Large Eggs
3 oz Granulated Sugar
6 oz White Chocolate
0.5 tbsp Vanilla Extract
Method:
1) Seperate the egg whites from the egg yolks and put aside the egg whites (you won't need them).
2) In a saucepan heat the heavy cream and vanilla together and bring it to a simmer and then whisk into the white chocolate until fully melted and well blended.
3) In a bowl whisk together the egg yolks and sugar until well blended.
4) Temper the egg sugar mixture into the cream and chocolate mixture. (This is the tricky part as you don't want to combine all at once which can make the eggs curdle. See the video below to see exactly how to do this)
5) Fill creme brulee dishes (or whatever small shallow ceramic dishes you are using) 3/4 of the way full.
6) Place creme brulee in a water bath making sure to put enough water so it reaches at least halfway up the side of the creme brulee dish.
7) Bake at 300 degrees until set or for about an hour however this temperature and time will be dependant on your oven and the size dish you use.
8) Once set, remove from oven and water bath and let cool for several hours in the refrigerator to fully set.
9) Top with sugar and fire away with your torch to get that classic brule look.
10) Garnish with fresh berries or whipped cream and enjoy the fruits of your labor!!!
