Parmesan Bacon Cauliflower Mash

So this recipe is super simple and only requires 5 ingredients. This recipe is so easy and healthy. I love mashed potatoes but unfortunately on the Keto Diet I can't have them, so I had to find an alternative. This is an awesome alternative if you are on the Keto Diet or even if you just want to try something different for dinner and people who hate vegetables love it. I do recommend using a large food processor for this recipe however if you don't own one you can simply use a standard potato masher however it won't be as smooth. Also note for this recipe I steamed my cauliflower using a steam basket but you can boil them (for about 5-6 minutes) just strain well and dry atop a paper towel before mashing. Parmesan Bacon Cauliflower Mash

Yield : 4-6 Portions


2 Cauliflower Head (Cut into Florets)

2 tbsp Chopped Garlic

3 oz Unsalted Butter

3 tbsp Chopped Bacon

1/2 cup Grated Parmesan Cheese

Salt & Black Pepper to Taste


Method:

1) Using a steam basket steam the cauliflower for about 15 mins or until fork tender.

2) Then in your food processor puree the cauliflower until smooth and place in a bowl while hot.

3) Add in your butter, garlic, parmesan cheese and then season with salt and pepper to your liking.

4) Lastly fold in your chopped bacon and viola you now have a super tasty side dish for any meal.
